Why are some farmers switching to organic? Environmental concerns? Health concerns? Better yields? Nannies would have you believe any of those, but, according to the Financial Times, the real reason is money. “If that premium [price paid for organic foods] disappears, I’d question if they would choose to go down that road,” says Bill MacFarlane-Smith of the Scottish Crop Research Institute.
