Beef Cleared Of Cholesterol Concerns

This week at the Canadian Institute of Food Science and Technology conference in Toronto, Dr. Margaret French, a government chemist, presented study results that demonstrated that beef fat does not raise blood cholesterol levels. "Even when our subjects were eating beef twice a day," French told her colleagues, "their total and LDL blood cholesterol levels were the same as when they were eating a diet of primarily chicken, beans and pulses (seeds)."
